We have our own trained inspectors located at each of the four auctions. Upon receipt at our plant the fish are once again inspected and graded
All our fish is hand cut to order.

The fillets are then skinned by machine. Trimming and a final rinse follows
 
Candling:
The trimmed and rinsed fillets are then inspected on light stations. Trimming and a final rinse for packing follows.
